- 35 ml Lambay Small Batch Blend
- Top Fevertree Lemon Tonic
- Lemon slice
Pour whiskey into a highball glass filled with ice. Top with Fevertree Lemon Tonic. Garnish with a lemon slice and enjoy!

A Summer easy-going whiskey cocktail, long and refreshing. This drink is a great addition to your Summer BBQ.
- 40 ml Lambay Small Batch Blend
- 10 ml Aperol
- 10 ml Creme De Peche
- 30 ml Lemon
- 15 ml Sugar
- Soda water
- Lemon Slice
Add all the ingredients of the cocktail, except the Club Coda, into a highball glass. Add ice and stir well for 30 seconds. Add ice again and top with 3 parts of soda water. Garnish with a Lemon slice.

THE The Lambay Whiskey Sour
Another simple yet classic twist on an old reliable for those magical Lambay moments, Lambay Small Batch Blend adds a tender sweetness to this cocktail.
- 50ml Lambay Whiskey
- 25ml Fresh Lemon
- 15ml Sugar Syrup
- 15ml Egg White
- Orange Bitters
Dry shake all ingredients without ice first. Add ice and shake all ingredients again into an ice-filled rocks glass. Garnish: Edible flowers.

THE Apricotini
So you’ve had a hearty meal and need the perfect digestif, then this elegant Apricotini is the ideal pairing. A delightful sophisticated cocktail for after-dinner to get the taste buds going.
- 40ml Lambay Whiskey Single Malt
- 20ml Antica Formula
- 10ml Apricot Brandy
- Barspoon Dry Vermouth
- Barspoon Cynar
- 2 Dashes Black Lemon Bitters
Add ice into a martini glass and set to one side. In a stirring glass add all ingredients and ice. Stir liquid for 15 seconds until diluted. Remove ice from martini glass and strain stirred liquid in. Garnish with dehydrated apricot.

THE Lambay Side-Car
Named after the motorcycle attachment from World War 1, this is a cocktail usually cognac based, but we have twisted it up Lambay style. As a result, our Lambay Side-Car has a delicate yet sophisticated take on a classic.
- 40 ml Lambay Whiskey Single Malt
- 10 ml Grand Marnier
- 10 ml Amaro Montenegro
- 30 ml Lemon Juice
- 10 ml Sugar Syrup
- Garnish with Orange Zest
Chill coupe glass and prepare all ingredients in a shaker. Once all ingredients are in the shaker, add ice and shake hard for 10-15 seconds. When shaken, empty ice out of the martini glass and double strain the cocktail into the glass using a fine strainer. Squeeze the orange zest over the cocktail and leave in the drink and serve.
